HillsCrest Distillery

At the top of the Darling Scarp in Western Australia, surrounded by jarrah and married forests is the delightful town of Mount Helena—the home of HillsCrest Distillery.

HillsCrest Distillery is a small family-run distillery established in 2020 – the year that changed everything.

After living in Tasmania and Scotland and being inspired by the many distilleries, both old and new, brothers James and Ed spent more than a decade discussing and dreaming of establishing their own distillery. Thousands of hours of research and planning saw these dreams develop into an achievable goal.

The advent of the Corona Virus and all that it entailed was the final push to get things started. And with sales and marketing guru, Jessica, now involved, HillsCrest distillery was up and running with the bottling of the first batch of Australian Dry Gin.

HillCrest's goal is to produce exceptional spirits using time-honoured traditional techniques. Using only the finest ingredients: pure filtered rain water, fresh lively citrus from local orchards, Australian grown malts, cereals and botanicals, and, when they cannot be sourced locally, premium ingredients from around the globe.
