Poly is a wine bar located in Surry Hills, Sydney, opened in 2018.
It is situated in the Paramount Building and is the sibling of Ester, a well-known restaurant in Chippendale. Poly has a sophisticated and cool vibe, with elegant neutrals and a few pops of color. The venue has a woodfired oven and arches, and is described as a "barstaurant". Poly's wine list is curated by sommelier and part-owner Julien Dromgool, and features over 25 wines available by the glass, as well as sakes.
